Chocolate chip oat Cookies

Cooking time 20 minutes

Makes 12 cookies

What you need:

2 bananas mashed
4 tbsp of peanutbutter or any nutbutter
30g of Coconut flour
80g of homemade granola
30g of jumbo oats
20g of chocolate chips
1 tsp of vanilla extract
1 tbsp of maple syrup

How to:
Preheat your oven to 180c/170c fan oven/gas mark 4.

Mash the two bananas in a large bowl or whizz in a food processor. Add in the maple syrup, vanilla extract and peanut butter.

Next add the granola, oats, coconut flour and a pinch of salt. Bring the mixture together until you have Cookie dough!

Next add in the chocolate chips and knead into the cookie dough.

Make 12 even balls from the mixture and space them out on a sheet tray. I find I need two trays for this. Using the palm of your hand flatten the dough balls to approx 2cm thick until you have a cookie shape.

Place into the preheated oven and bake for 20 minutes until golden and crisp around the edges.

Remove from the oven and place the cookies on a wire rack to cool completely.

You can eat as they are or melt 40g of dark chocolate in 20 second blasts in the microwave and drizzle over the cookies.

Store in an airtight container for up to 1 week. Or freeze for up to two months.
